Fontenille Pataud, the makers of the finest cutlery are proud to reissue and interpret the ancestor of the Laguiole knife. Their excellence in manufacturing will ensure that this knife will prove to be the perfect gift or purchase for all connoisseurs and collectors.
Hand chiseled and forged spring
The bee is solid and forged into the spring. The spring and bee are then hand-chased with a file : This denotes artisan quality, unlike inexpensive mass market products that have welded springs and are machine decorated.
Stainless steel damascus blade
The Damascus steel we’re using is from Damasteel® and the patterns will last the life of the knife.

Display box
Each knife is delivered in an elegant presentation box, designed to highlight its beauty and provide optimal protection. Give or receive our exceptional knives in a refined case that enhances every detail.
Customize your knife
Our specialty: Personalize your knife (first name, initials, date...) with a beautiful engraving of the spring produced by a professional engraver. The engraving is performed before the file work (guillochage) and the heat treatment.
Before the Laguiole knife was the Capuchadou
Before the development of the Laguiole knife in the 19th century, french shepherds carried a knife called the "Capuchadou" (or "capujadou"). This knife was used for all daily tasks, from preparing lunch to care of their flocks of sheep.
Fontenille Pataud, the makers of the finest cutlery are proud to reissue and interperet the ancestor of the Lagiole knife. Their excellence in manufacturing will ensure that this knife will prove to be the perfect gift or purchase for all connoisseurs and collectors.
Technical details
The "Guilloché" pattern is our premium range: the spring is inlayed with a natural stone, and you will take advantage of an extra file work on the plates and the blade's top.
Size and weight: 10 cm folded, 17 cm open, approx. 90 grams
Handle & stone: Walnut. The wood we are using comes from a selection of premium guns stocks. There is an amethyst inlayed into the spring.
Blade: "Rose" Damascus stainless steel steel,120 layers, 3 mm thick. Hardness: 60 Hrc.
Technical tips: The bolsters with fillets are made of silver-nickel. The spring is made from 3 mm thick stainless steel Z20c13 and features a bladestop: That helps maintain the edge of the blade. The whole "shamrock" spring is hand-chased with a file: This denotes artisan quality, unlike mass market products that have welded springs and are machine decorated. The file work and the amethyst inlayed create a unique knife, making each knife one of a kind.
